The onion-shaped seeds known as rondelles, bobimbi, and oulum are produced by the West African rainforest tree Afrostyrax lepidophyllus, commonly known as the garlic tree and native to Ghana, Cameroon, and Gabon in West Central Africa. Country onions and the tree’s bark are used as a condiment and in traditional medicine in Cameroon. Country onions are tiny taste bombs that have a powerful flavour and complex flavour with undertones of onion and garlic. This unusual condiment only comes into season once or twice every two years, but the wait is well worth it because it will introduce you to a completely new flavour world.
